What kind of tutorials would you guys want to see here? Mainly UDK related, but of course they can be about 3D programs or Photoshop etc.

Something that I see is missing a lot is a simple Cover System for FPS games.

Oh god... so many things I'd love to see...
My honest answer is: "everything". But obviously that isn't helpful
I think initially a great way to build up this section would be to write up a bunch of new developer tutorials. Things that explain the very basics of whatever system you're focusing on that, if followed, will allow even the noobiest of noobs (*coughme*) to follow. For some games this would probably start off with mapping tutorials, others may be intros to modelling or skinning or basic programming, etc.
I would also love to see a tutorial (or I guess more of an advice thread?) that is a kind of "So you think you want to make a game, eh?" thread, where it not only explains some of the platforms you can use (and their various pros/cons), but focuses on stuff like what you should prepare ahead of time (like what decisions they need to make before doing ANY development, design doc stuff, etc.) So it'd really be a bunch of questions that people interested in making their own game would need to ask themselves first, plus explanations as to *why* they need to consider these things (and links to resources depending on their answers... so if they want to do RTS they use one thing, FPS another, etc). Don't know if that made sense... haven't slept yet.
Anyways, starting from the basics would probably be best, with advanced guides peppered in as able.

I could work on the things you need to consider before starting-thread.

An intro to UDK would probably be best first, depending on what you mean by how the graphics work. Did you mean an insanely technical document that just explains how the actual translation of computer jibberish turns into grapihcs (magnets pixels, how do they work?), or do you mean like how to skin or use Photoshop/GIMP/etc.?

How 3D graphics work, what models, textures etc are and so on.

Ah. Well, if it's an intro to graphics for game development in general, I'd say that would probably be the first priority.
